You’ll be seeing a lot of popcorn recipes on here, considering popcorn is one of the greatest foods. This caramel cinnamon popcorn mix is perfect for when you want to snack WHILE being incredibly happy. I have also tested this recipe out on runners, and they all approve.

One of my favorite things about popcorn is that it takes a long time to eat, but it’s kind of like eating tasty air. It’s not like a bag of chips where after I devour the entire bag (which come on, I totally would) I feel like I should get a lecture from a nutritionist at any moment.

When I finish a bowl of popcorn all I know is that I certainly got in my serving of vegetables for the day (corn, of course. JK I know it’s sadly not a vegetable). With dessert popcorn, it’s even better because it’s munching food. That means it takes awhile to eat unlike a piece of cake that is gone in seconds and I’m left with an empty plate and empty heart. Do you see my point here?

This popcorn is perfect for gatherings of young people, middle-aged people, even old people if they have all their teeth. It can be easily stored on your counter in Ziploc bags or Tupperware. It also stores nicely in hungry bellies.

Homemade caramel corn is the only way to go, and it’s shockingly easy. Plus it kind of feels like one of those “labor of love” tasks that doesn’t actually require a ton of labor (even with the with fancy chocolate drizzle). I can’t take credit for the caramel recipe. Oh and then the easiest part, the caramel bits. Those just come in a bag. Doesn’t get much easier than that.

This recipe can be made in stages, so no worries if you don’t have the time to throw it all together at once (There is literally a step that tells you to throw it all together). You can make the caramel corn first, the cinnamon-sugar pretzels some other time, and once you feel like you are ready to introduce the two, go for it.

Ingredients

For the popcorn

  • 10 cups air-popped popcorn
  • 1 cup light brown sugar
  • 1/4 cup light corn syrup
  • 1/2 cup unsalted butter
  • 1/8 tsp cream of tartar
  • 1/2 tsp salt
  • 1/2 tsp baking soda

For the cinnamon-sugar pretzels

  • 1 16 oz bag tiny twist pretzels
  • 1/2 cup vegetable/canola oil
  • 1/2 cup sugar
  • 2 tbsp cinnamon

For the mix

  • 1 package caramel bites
  • 1/2 cup semi-sweet chocolate chips
  • 1 tsp coconut oil

Instructions

For popcorn

  1. Preheat oven to 200 degrees. Line a large baking sheet with parchment paper Spread popcorn out on sheet. 

  2. Combine brown sugar, corn syrup, butter, salt, and cream of tartar in a medium saucepan over medium heat. Stir constantly, letting it boil for five minutes. 

  3. Remove from heat and stir in baking soda. Pour caramel over popcorn and stir to coat thoroughly. 

  4. Bake for an hour, stirring occasionally. Let cool and break apart. 

  5. In a microwave-safe bowl, microwave chocolate chips and coconut oil for 30-second intervals, stirring in between. When melted, drizzle chocolate over the popcorn. Set aside so the chocolate can harden. 

For cinnamon-sugar pretzels

  1. Preheat oven to 200 degrees. Line a large baking sheet with parchement paper. 

  2. In a small bowl, combine sugar and cinnamon. In a large bowl, combine pretzels and oil. Pour sugar/cinnamon mixture over pretzels and mix well. 

  3. Spread pretzels on baking sheet and bake for 50 minutes, stirring occasionally.

Assembly

  1. On a large baking sheet, throw together popcorn, pretzels, and caramel bits. Store in gallon-sized Ziploc bags or large Tupperware containers.
