Grilled cheese breakfast sandwich

Have you ever woken up with the thought, “today’s a good day for a big breakfast”?

If so, this grilled cheese breakfast sandwich is the meal for you.

Wanting a big breakfast requires a specific state of mind, at least in my opinion. I’m really not much of a breakfast person (until it’s about an hour before lunchtime and I’m so hungry that I’m cursing myself for not being a breakfast person), but occasionally I wake up knowing that a big breakfast is an excellent idea.

It usually comes the morning after a long run. That’s when I’ve already put in the work so therefore I won’t have to move the rest of the day if necessary.

The last time I felt this way was the morning after the Hurt the Dirt Marathon. I don’t know about you, but before a race I always spend a good deal of time imagining all the wonderful things I will eat once I’ve finished the race, only to feel too sick to eat much of anything the whole rest of the day. I mean, what’s the point of long distance running if I can’t eat everything always?!

But then the next day rolls around and so does my appetite. That’s when the real meal planning comes in. Starting with breakfast. Like maybe a grilled cheese breakfast sandwich.

There are a lot of things I say I love. I’ll say I love a TV show or the color of a house or a fictional character I will never meet. But when I say I love grilled cheese, I mean it with every fiber of my being.

So yes, there’s a grilled cheese involved because it’s never too early (or too late, midnight grilled cheeses were a very real thing for me when I used to stay up that late) for a grilled cheese.

So we’ve got a perfectly grilled and cheesy grilled cheese and then you think to yourself, what’s another great anytime food? Oh right, avocado toast.

Now, I understand avocado toast is a huge fad and everyone’s saying how much they love it and how much it’s changed their life (by the way, if it has changed your life, I mean no disrespect because you and avocados are awesome). But everyone must be onto something with this absurdly simple dish because it is delicious, even the people at Bon Appetit think so (they are my go-to’s on what food I should respect or not). Therefore, it belongs in a place of honor on top of our grilled cheese.

So we’ve got our grilled cheese and we’ve got our avocado, but we aren’t stopping there. We’re talking a runny fried egg topped with crispy hash browns. Boom. Now we’re done and have a beautiful grilled cheese breakfast sandwich to show for it.

Although, you may want to grab a fork and knife…

Breakfast avocado grilled cheese

Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes
Servings 2 sandwiches

Ingredients

  • 2 tbsp butter
  • 4 slices thick, crusty bread
  • 1/2 cup cheddar cheese
  • 1/2 cup mozzarella cheese
  • 1 avocado, skin and pit removed
  • 2 eggs
  • 2 cups frozen hash browns
  • 2 tbsp olive oil
  • 1/2 tsp sea salt
  • salt and pepper, to taste

Instructions

  1. Heat pan to a low heat while spreading butter on each slice of bread. Fry open face until the cheese is melted. While it cooks, heat another nonstick skillet to medium heat.

  2. Cook eggs sunny side up in the skillet. Set aside and heat the olive oil in the skillet to a medium heat and cook hash browns according to the instructions on the package.

  3. Once the cheese is melted, put the pieces on bread together and transfer to plates. smash one half of the avocado on the top of each sandwich and sprinkle on the sea salt and pepper.

  4. Top with egg and hash browns. Sprinkle on salt and pepper and cut in half.
