Easy almond butter noodles

Perfect for any night of the week, these almond butter noodles are a quick and easy choice for a healthy dinner. Just add your favorite vegetables and anything else that sounds good (protein, sesame seeds, roasted sweet potatoes, etc). These noodles are part of the Top 10 Foods for Runners series! Easy almond butter noodles

Ingredients

  • 2 large handfuls rice/soba noodles
  • 3 tbsp almond butter
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1/4 tsp ground ginger
  • 1 clove garlic, minced
  • 1 tbsp honey
  • 2 tbsp sliced almonds, toasted
  • 2 cups frozen mixed veggies, cooked to your liking (steam, bake, etc)

Instructions

  1. Cook noodles according to package instructions. Reserve at least 1/4 cup of the water. 

  2. Mix together almond butter, soy sauce, rice vinegar, ginger, and garlic. Pour over noodles. Add pasta water if a thinner consistency is needed. 

  3. Divide between two bowls and top with veggies and almonds.
