Preheat oven to 400 degrees. Line a small baking sheet with parchment paper.
Brush pita with olive oil and sprinkle with garlic powder. Cut into eighths and place on baking sheet. Bake for 5-7 minutes or until crispy.
Cook couscous according to package instructions. Fluff and let cool.
Follow falafel mix instructions on the package. Fry the falafel and set aside on a paper towel-lined plate.
Whisk together lemon juice, 2 tablespoons of olive oil, garlic powder, and salt and pepper in a small bowl.
Combine couscous, mint, cucumber, red pepper, spinach, and the lemon juice mixture. Divide between two bowls.
Top each bowl with half the hummus, feta, avocado, falafel, and pita. Serve.
