Vegan spiced hot chocolate

Servings 2 large mugs

Ingredients

  • 4 cups unsweetened almond milk
  • 1.5 inch fresh ginger, peeled
  • 1 cinnamon stick, broken into a few pieces
  • 1 star anise
  • 6 whole cloves
  • 1/2 cup vegan chocolate chips (such as Enjoy Life)
  • 2 tbsp pure maple syrup
  • 1/4 cup cocoa powder
  • 1 tsp vanilla extract

Instructions

  1. Combine first 7 ingredients in a medium saucepan. Bring to a boil (stirring occasionally).

  2. Remove from heat and let it rest for at least 10 minutes. Return to low heat and whisk in cocoa powder and vanilla. 

  3. Bring to a simmer. Use a slotted spoon to remove cinnamon stick pieces, star anise, ginger, and cloves. Divide between two large mugs and enjoy!
